Easy and fluffy vegan blueberry pancakes

Pancakes, is a staple breakfast food in all family’s kitchen tables! That’s why is no surprise that vegan blueberry pancakes exist, since who doesn’t love a stack of pancakes in the morning?

No one!😆

These pancakes are so delicious and easy to do.I hope this recipe can turn in one of your favorite breakfasts/brunches, just like me.

Before I share the recipe with you guys,I need to share the secret to get fluffier pancakes.

Tips for the best blueberry pancakes

Brittany from the blog “Pomelo” contributesd an article to the “Say yes” blog with very useful tips to make your pancakes fluffier. And I will summarize them below:

  • Flip the pancakes as soon as you see bubbles on top: This is crucial guys if you don’t do that your pancakes are going to be hard and not fluffy.
  • The batter needs to rest! Yes, just as we do to recharge our batteries, and prepare for the next day, ingredients of the batter also need to rest, especially the chia or flaxseed egg. These vegan eggs need to sit for some time until they get thick.

By the way, don’t even dare to forget about giving the batter some rest.

Brittany suggest to give the batter a 15-30 minutes rest, so the wet ingredients can incorporate well into the flour.

  • Please mix the batter just enough, don’t overmix it. Although I used gluten-free flour, this tip still applies even when Brittany referred to gluten flour. Remember to stop mixing once you see little lumps of flour, don’t try to get rid of all the little lumps because then you will overmix the batter, and your pancakes will be hard.

Ingredients, and substitutions

Wet ingredients

  • 1 cup of plant-based milk: I used soy milk, but you can use whatever plant-based milk you like.
  • 1/4 tsp of vanilla extract
  • 1 tbsp of maple syrup
  • Flaxseed egg(2 tbsp of water+1 tbsp of flaxseed)
  • 1 banana
  • 1/2 cup of blueberries(make sure to chop them in half)

Dry

  • 1+1/2 tsp of baking soda
  • 1/4 tsp of cinnamon powder
  • 1 cup of gluten-free flour

How to make vegan blueberry pancakes

1-First, let’s gather all the ingredients, both the dry ingredients and the wet ingredients. While you are at that, get 2 bowls to separate both kinds of ingredients.

2-Second put in the bowl of the wet ingredients the water, banana, and the flaxseed of the flax egg and mix it with a spoon so the flax egg can get thick.

3-Once the flax egg gets thick, toss all the wet ingredients in the bowl, and whisk them together, leave the mixture rest while you mix the dry ingredients.

4-Next, mix the dry ingredients. After you mix the dry ingredients, toss slowly the wet ingredients into the dry ingredients and mix them.

5-Once your batter is together let it rest for 15 minutes so the wet ingredients can be absorbed by the dry ingredeints.

6-Last but not least, put some vegan butter in a pan and heat it. After the oil gets hot fill 1/2 a cup of a measurement cup with the batter. Try not to make the pancakes too thick or too thin. Prepare to flip the pancakes ONLY when you see bubbles on top. Cook both sizes under medium heat, and you are all done!

7-Enjoy your pancakes with fruits on top and maple syrup. You also can be creative, and get crazy, and put whatever toppings you want! At the end you did these pancakes!

Notes

-Make sure you only flip the pancakes when you see the bubbles on top. Is easy to make the beginner mistake-that happens to everyone- of flipping your pancakes too soon so remember to wait for the bubbles on top before you flip them.
