The best vegan baked ziti with mushrooms

This vegan baked ziti is so amazing, It taste like real italian pasta.

It’s weird because this was the first vegan pasta that I did that tasted so Italian🤣. Even my sister said it tasted great, and she is not vegan.

If you are dying to eat some really Italian pasta without compromising your vegan diet this is for you 😃

I was really surprised how this recipe turned out because I’m not italian I’m dominican 😂

Is this recipe dairy free, and gluten free?

Of course it is, I did the vegan ricotta with cashews, and the pasta is also gluten free.

How to make the vegan baked ziti?

Although this recipe takes about an hour including the baking time, you can eat the leftovers for 4 days if you save them in the fridge in an airtight container.

So please don’t regret the time that you spent making it, it will be worth it at the end, trust me.

Here are the ingredients that you need.

Vegan baked ziti ingredients

Pasta

-2 cups of spinach

-A handful of basil leaves

-1 bell pepper(any color will do)

-A dash of ground pepper

-1 tbsp of ground oregano

-2 crushed cloves of garlic

-2 cups of chopped cremini mushrooms

-Half an onion

-A dash of shredded daiya motzarella

-1 can of crushed tomatoes

Vegan ricotta cheese

-1 cup of soaked cashews

-2 tbsp of nutritional yeast

-1 tsp of salt

-1/4 of a cup with water

-1 garlic clove

-1 tbsp of apple cyder vinegar

-1/2 tsp of garlic powder

Vegan parmesan

-1/2 of a cup with walnuts

-1/3 of a cup with nutritional yeast

-1 tsp salt

Instructions

1-Bring a pot of water, under medium heat, with a pinch of salt to a boil and toss the pasta. Remove the pasta from the boiling water once is done, and drain it.

2-Chop the spinach, and basil leaves, the onion, and bell pepper, and crush the garlic.

3-Wash and cut the mushrooms in small pieces

4-Start working on the ricotta cheese. Put all the ingredients in your food processor or blender and blend them in. Once you blend all the ingredients your vegan ricotta cheese will be all set.

5-After you finish making the ricotta cheese go ahead and blend the ingredients for the vegan parmesan cheese.

6-Sautee the onion, garlic ,bell pepper, mushrooms with oil in a cooking pan until onions are transparent.

7-Toss in a bowl the cooked pasta the crushed tomatoes sauce, the vegan ricotta, and the sautee veggies, and mix the ingredients.

8-Grab a pan and grease it with olive oil or vegan butter and put the zeti in the pan.

9-Place the pan with the ziti in the oven, bake at 350 degrees

  • Toss in a bowl the cooked pasta the crushed tomatoes sauce, the vegan ricotta, and the sautee veggies, and mix the ingredients.
  • Grab a pan and grease it with olive oil or vegan butter and transfer the ziti from the bowl to the pan.Once you put it in the pan sprinkle some vegan motzarella cheese.
  • Place the pan with the ziti in the oven, bake at 350 degrees
  • After the oven finish your vegan ziti is all ready to devour. Serve with parmesan cheese.

Notes

-The leftovers will be good to eat in your fridge in an airtight container for 4 days
-For the crushed tomatoes I used Cento crushed tomatoes, the 28oz can. This is my favorite brand of crushed tomatoes because is cheap, and it only has peeled crushed tomatoes and tomato juice. This crushed tomatoes can is what gives my pasta an Italian flavor.
-I did my vegan ricotta with Jiva organic raw cashews. I only can find these cashews online on Amazon, but they are one of my favorite products.
-If you don’t have ziti pasta feel free to use any other pasta that you have at home.
-I used Fisher walnuts to make my vegan parmesan cheese, but you can use almonds if you want. You can totally make a large batch of vegan parmesan cheese because you can use it in so many different dishes! like vegan lasagna, salads, pasta, buddha bowls, and  soups.
